Bottle gourd Dumpling (Lauki Muthia)

Ingredients #

  • 2 cups grated bottle gourd (Lauki, Doodhi)
  • ½ cup whole wheat flour
  • 1 cup sergom flour (Juwar)
  • ½ cup besan (Bengal gram flour)
  • 3-5 spoon semolina (Rava)
  • 1 tsp. ginger paste
  • 1 tsp. chili paste
  • 1 tsp. garlic paste
  • ½ tsp. turmeric powder (haldi)
  • ½ tsp. cumin seeds (jeera)
  • ½ tsp. fennel seeds (saunf)
  • 1 tsp. lemon juice
  • 1 tsp. brown sugar
  • 2 tbsp. chopped coriander (dhania)
  • 2 pinches of soda bi-carb
  • 2 spoons sesame oil or any
  • Salt to taste
  • For Tampering
  • ½ tsp. asafetida (hing)
  • 2 spoon oil
  • ½ tsp. mustard seeds
  • 1 tsp. white and black sesame
  • For garnishing 2 tbsp. finely chopped coriander (dhania) or 1 tsp. coconut flakes

Method #

  1. Combine the bottle gourd with all ingredients except tampering ingredients.
  2. Mix well and knead into soft dough.
  3. Add water if required for mine didn’t need.
  4. Apply ¼ tsp. of oil on your hands and divide the mixture into 4-5 equal portions.
  5. Shape each portion into a cylinder roll.
  6. Arrange the rolls on a greased sieve and steam in a steamer for 15- 20 minutes.
  7. Remove, cool 10-15 minutes and cut into approximate 10-12 mm slices.
  8. For the tempering, heat the sesame oil 2 tsp. in a kadhai and add mustard seeds.
  9. When the seeds crackle, add the sesame and asafetida (hing) and sauté on a medium flame for a few seconds.
  10. Add the muthia pieces and sauté on a medium heat for 2-3 minutes or till they turn light brown in color and crisp.
  11. Garnish with chopped coriander or with Coconut flakes.

Serve with chutney or good to go with cup of tea………
