Grilled Vegetables on Focaccia Bread

Make this tasty sandwich that the whole family is sure to enjoy!


  • 1 large zucchini
  • 1 small red bell pepper
  • 1 small onion
  • ½ cup corn ( Frozen or fresh)
  • 1 small eggplant
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • 2 tablespoon balsamic vinegar
  • 1 teaspoon freshly ground black pepper
  • ¼ spoon cumin powder
  • 1-2 cloves minced garlic
  • One bread, focaccia
  • Two ounces ricotta cheese
  • One ounce soft goat cheese and One ounce cream cheese


  1. In a bowl combine the vinegar, oil, garlic and oregano. Add the chopped zucchini, chopped sweet peppers, chopped onion, corn and chopped eggplant, toss to coat. Drain vegetables, discarding vinegar mixture.
  2. Grill vegetables on the uncovered grill over medium heat until browned and tender (I grilled veggie. on stove top), about 5-10 minutes or in oven at medium heat 4-6 minutes. (Brush your veggie with little oil before putting in oven). Transfer all veggie. in a bowl. Add salt to taste, black pepper, cumin powder and ricotta cheese.
  3. Cut the focaccia in half crosswise. Cut the halves horizontally in half to form 4 pieces total. Grilled all piece of focaccia.
  4. In small bowl combine the goat cheese and cream cheese. Spread the cheese mixture on the top piece and vegetables mixture with the bottom pieces.
  5. Close sandwich the other piece of focaccia and enjoy!! 

Tip: You can spread basil pesto, mayo, and ketchup etc. instead goat cheese and cream cheese. Change up the vegetables with whatever is available in your house.
