Spicy Zucchini Curry

Spicy Zucchini curry is one of my favorite delicious curry. It has a very unique taste with garlic, cumin powder and black powder. Zucchini serves as a good source of Vitamin C,Lutein and Zeaxanthin.

Prep.Time 15 Mins Cooking Time 20 Mins Servings 2-3

Ingredients

  • Zucchini 2 large size with skin, sliced in ½ inch thick
  • Onion 1 finely chopped
  • Tomato 2 finely chopped
  • Garlic chopped 2-5 (1 tbsp)
  • 1 tsp Black Pepper freshly ground
  • 1 tsp Cumin Powder
  • 1/2 tsp cumin seeds
  • Ginger ½ inch chopped
  • Green chilies ½ -2 finely chopped
  • Chilli powder ½ -1 tsp or as needed
  • Turmeric Powder ¼ tsp.
  • Hing (Asafoetida) one pinch
  • Cilantro for garnish
  • Salt as needed
  • Oil 2 tbsp.

Method

  1. Chop the zucchini into round chunks. Heat 2 tbsp of oil in a pan. Add cumin seeds. When they splutter add onion and hing and salt. Sauté until onion turn nice golden brown.
  2. Add ginger, garlic, chilli paste and fry for a minute.
  3. Add the fresh tomato pieces/puree and let the mixture cook for at least 8-10 minutes or until the little oil is separate.
  4. Add all the dry spice powders chili powder, black pepper powder, cumin powder, turmeric powder.
  5. Add the zucchini pieces and required water. Bring the gravy to a boil.
  6. Simmer the gravy till zucchini are cooked. Zucchini should be tender not mushy.
  7. (About 5-8 minutes). Switch off the stove.
  8. Garnished with coriander and serve with any roti varieties or rice or bread.
