Raj Kachori

Raj Kachori is spicy chaat bowl filled with delicious condiments like a pani puri. It has a refreshing flavor. Served as a snack or appetizer. Generally in raj kachori stuffing of aamchur powder, red chili powder etc. but I am adding chaat masala in sprout and in chutney so like to make kachori with simple ingredients

Ingredients

  • 1 cup Semolina
  • 1 Tbsp. Whole Wheat flour
  • 1 Tbsp. Gram Flour (Besan)
  • 1 Tbsp. Oil
  • ½ Tsp. salt
  • ½ Tsp. Red Chili Powder
  • Approximate ½ cup lukewarm water or ½ cup club soda

Condiments to be served In Kachories

  • 1 Cup Moong Sprouts
  • Split Green gram flitters
  • 1 Cup Whipped yogurt with salt, 1 tbsp. sugar, ½ Tsp. Cumin powder
  • ¼ cup Green Chutney (Pesto)
  • ¼ cup sweet chutney
  • ¼ cup fine sev
  • Chopped Coriander

   Method

   Dough

  1. In a mixing bowl add flour, red chili powder, salt and oil, add water slowly while mixing and kneading to make firm dough. Dough should be not too hard, not too soft.
  2. Cover and set dough aside for at least 10-15 minutes.
  3. Knead dough for a minute and divide into 15-17 equal parts.
  4. Roll dough ball into 2-3-inch diameter circle
  5. Heat oil in a frying pan over medium heat.
  6. Slowly drop kachories into the frying pan making sure they don’t overlap one another. As kachories puff up, slowly turn them over and fry on all sides. Turn kachories 3-4 times until they are golden brown in color, which will take 6-8 minutes. Kachories should be crisp. If the kachories are fried over high heat they will be too soft. If the kachori soft put it in oven at 300f for 10-15 minutes not more than that.

Prepare Moong Sprouts

Add ¼ Tsp. of salt and 2-3 Tbsp. of water to the Moong sprouts. Cover and cook over medium heat for 6-10 minutes till sprouts are tender. Set aside. Sprinkle some chaat masala.

Serving Kachories

  1. Gently make an inch sized whole in the center of the kachori.
  2. Fill with 1 Tbsp. of sprouts, crushed Moong dal flitters, 1-2 Tbsp. of yogurt and a drizzle with both of the chutneys.
  3. Add a little chopped cilantro, fine sev and enjoy!

Note: Kneading dough is very important when you making puri for Pani Puri or kachori. Kachori can be prepared in advance and stored up to 2 weeks in air tight container.
