Beet, Cauliflower Nuggets (Cutlets)

I made Spaghetti with marinara sauce in lunch, thinking of making veg.meatball as a side dish but I haven’t all ingredients, so I made some yummy cauliflower nuggets and stripes. It was very delicious and very easy and quick to prepare. Good to go stripes in my sub sandwich and Pattie in burger.

I like to add nutritional yeast in my dishes because as a vegan ,Nutritional Yeast is one of the only non-animal sources of vitamin B-12.

Ingridients 

  • Cauliflower 1 and ½ cup grated
  • Beet root 1 small peeled and shredded
  • Potato 1 small boiled and mashed
  • Nutritional Yeast 1 Tsp.
  • Chili Powder ½ Tsp. (adjust according to your taste)
  • Cumin Powder ¼ Tsp.
  • Garam Masala Powder ¼ tsp. (Optional)
  • Ginger one inch grated
  • Whole Wheat flour or All Purpose Flour 3 Tbsp.
  • Cilantro 2 Tbsp. Chopped
  • Bread crumbs ½ cup
  • Lemon Juice 1 Tsp.
  • Brown Sugar ½ Tsp.
  • Salt to taste
  • Oil for fry

Method 

  1. Boil potato and peel the skin and mash well and put in wide bowl.
  2. Wash and shred cauliflower and keep it in warm water for 5-10 minutes. After drain completely, squeeze out excess water add in bowl.
  3. Wash beet, peel skin and shred and add in a bowl.
  4. Add cilantro, nutritional yeast, red chili powder, garam masala, and cumin powder; ginger grated, lemon juice, sugar, salt to taste, whole wheat flour or all purpose or gram flour.
  5. Now divide the mixture in to equal lemon sized balls. If you wanted to make some stripe than take more mixture and shape like stripe.
  6. Mix flour with water and keep aside.
  7. Heat flat fry pan or griddle add 2-3 spoon of oil, take one by one ball, press it gently and dip it gently in the flour batter roll in bread crumbs. Fry all nuggets and stripes till become crisp and light brown. Or you can deep fry in oil.
  8. Once done, remove from pan and drain the excess oil in paper towel and serve.
  9. Super yummy nuggets and stripes ready to serve with my spaghetti.
